Edgar Alfonzo Cordova Saldaña owns a 2-hectare farm, La Montaña, where he grows Caturra variety coffee under a   cover of shade trees. Like many of his fellow members of the cooperative Lima Coffees, Edgar holds organic certification for his farm. The coffee on La Montaña is picked ripe and de-pulped, then given an open-air fermentation in tanks. It is washed and then dried for about 15–25 days.

Aromas of cherry, citrus, and honey melt into a cane-sweet blossoming of tropical fruit, milk chocolate, and apple butter flavor. The soft pineapple acidity is balanced with a creamy body, and the finish is elegant and gentle with hints of vanilla.
