We have two fine Nicaragua coffees from Finca Las Segovias this year. This is a washed process coffee with honeysuckle and plum aromas and a syrupy body. It features sweet cherry and dark chocolate flavors, soft and pear-like acidity, and cane sugar sweetness. The finish is smooth and lingering with hints of clove and star anise. The washed process accentuates the dark chocolate and almond notes while keeping the cherry and fruit notes further in the background.
